The name "Bimber" means moonshine in Polish, a nod to the founders' Central European heritage. Bimber operates with a grain-to-glass philosophy and a commitment to traditional methods that are rarely found in modern craft distilling: slow fermentation, small copper pot stills, and patient maturation in hand-selected casks. The result is an English single malt that holds its own against established Scotch producers, attracting a loyal enthusiast following since the first release in 2019.

History

Bimber Distillery was founded in 2015 in Park Royal, West London. The first casks were filled on 26 May 2016, beginning the clock on what would become one of England's most anticipated whisky debuts. The inaugural single malt — simply called "The First" — was released in September 2019 in a limited edition of 1,000 hand-numbered bottles. It sold out within three hours, establishing Bimber's reputation for quality and rarity in a single afternoon.

Since that debut the distillery has built out a range of expressions defined by different cask types: ex-bourbon, ex-sherry, virgin oak, and various wine cask finishes. The founders' approach — drawing on Polish distilling traditions and a preference for unhurried production — gives Bimber a character distinct from many English craft distilleries that prioritise volume over patience. Gin and vodka are also produced, supplementing the whisky range commercially while the main single malt stock matures.

Production

Bimber uses traditional copper pot stills and slow, open-vessel fermentation to build complexity in the spirit before distillation. All whisky is produced from 100% malted barley milled and mashed on-site. The emphasis on low throughput means individual batches are small, and each bottling reflects a particular cask or combination of casks. Maturation takes place in a variety of wood types including ex-bourbon American oak, ex-sherry European oak, and virgin oak, with periodic wine cask finishes. No production capacity figures have been published by the distillery.

Tasting Character

Bimber single malt tends toward rich, classically structured expressions in the mould of traditional Scotch — full-bodied, with orchard fruit, vanilla, and oak spice from ex-bourbon maturation, or dark fruit and chocolate depth from sherry casks. The house style rewards patience: despite being a young distillery, the whisky carries a weight and integration that suggest careful attention to fermentation and distillation as much as cask selection. The gin is cold-distilled and the vodka is made to similarly high craft standards, both reflecting the founders' insistence on quality across the entire range.
