Circumstance Distillery
Bristol's only whisky distillery and one of the UK's most innovative craft producers, located at Unit 2, Gerrish Avenue, Bristol BS5 9DF. Founded in 2018 under head distiller Mark Scott, Circumstance produced the first whisky made in Bristol for over 80 years — the last Bristol distillery having been destroyed during the Second World War. Master of Malt named Circumstance "Britain's most innovative distillery." The distillery's defining characteristic is a "flavour first" philosophy that uses multi-grain mash bills, brewing yeasts, and long open fermentation to build complexity, rather than relying on conventional single malt methods. Circumstance is B Corp certified, Carbon Neutral Britain certified, and certified organic by the Biodynamic Association — a rare triple sustainability certification in British whisky.

History
Mark Scott launched Circumstance Distillery in Bristol in 2018 with the ambition of producing genuinely innovative English whisky in a city with a proud but long-interrupted distilling history. The last Bristol distillery was destroyed during the Second World War's Bristol Blitz, leaving an 80-year gap in the city's whisky production.
First casks were laid down in 2018–19 and the distillery's inaugural whisky — Batch 1, a single grain from malted and unmalted barley matured for 37 months in ex-bourbon cask — was released in September 2022. The release was the first whisky made in Bristol for over 80 years, attracting significant attention from the specialist press. Since then Circumstance has added organic single grain and wheat whisky variants, building a small but distinctive portfolio. The distillery was nominated for "Best World Whisky" at the 2025 Online Scotch Whisky Awards. Cask ownership opportunities are available through Still In Cask, and a 5L refill carton service supplies on-trade customers.

Production
Circumstance distils multi-grain mash bills using malted barley, unmalted barley, and wheat — a departure from the conventional British single malt approach. Fermentation uses brewing yeasts in long open-vessel fermentation, building complexity in the wash before distillation. Copper pot stills are used for distillation. Maturation in ex-bourbon American oak is standard; organic variants use certified organic grain throughout the process. Annual capacity has not been publicly disclosed. The distillery adheres to strict environmental standards: all spent grains are repurposed as animal feed, and bottles are accepted back for reuse. Net-zero carbon and B Corp certification underline the operational ethos.
Tasting Character
Circumstance whiskies are more complex and grain-forward than conventional single malts, reflecting the multi-grain mash bill and longer fermentation. The flagship Batch 1 shows cereal complexity — biscuit, stone fruit, vanilla from ex-bourbon oak — with a texture influenced by the mix of malted and unmalted barley. Wheat whisky variants add a softer, creamier dimension. The organic expressions show a subtly cleaner, more precise cereal character. Overall the style is innovative and layered: a whisky made by someone thinking about flavour before conforming to category expectations.
