Penderyn Distillery is Wales' founding modern whisky producer and the pioneer of the Welsh whisky revival, established in 2000 in the village of Penderyn in the Rhondda Cynon Taf area of the Brecon Beacons. Welsh whisky had been commercially extinct since 1894. Penderyn's establishment — supported by Welsh Development Agency funding — deliberately set out to revive the category and succeeded: the distillery is now the most prominent Welsh whisky brand globally. Its most distinctive production characteristic is the unique Faraday still, a single copper pot still design by Dr David Faraday that produces spirit of exceptional lightness in a single pass. Penderyn has expanded to three sites: this original Brecon Beacons distillery, Penderyn Llandudno Distillery (2021), and Penderyn Swansea Copperworks Distillery (2023).

History

Penderyn was established in 2000 as the Welsh Whisky Company. Welsh whisky production had last been commercially viable in 1894, making the revival a deliberate act of category reconstruction rather than simple business development. The Faraday still design — created by Dr David Faraday — was commissioned specifically for the distillery, producing spirit at high strength in a single pass rather than the double distillation typical of Scotch. Water is drawn from a spring beneath the Brecon Beacons.

First sales began in 2004, when Penderyn became the first Welsh whisky manufactured in Wales for over a century. A visitor centre opened in June 2008, attended by Charles, then Prince of Wales — a fitting symbolic moment for the Welsh national whisky. The distillery now attracts over 35,000 visitors annually. Expansion came with the opening of Penderyn Llandudno Distillery in May 2021 (inside a Grade II listed Victorian school building, specialising in peated whisky) and Penderyn Swansea Copperworks Distillery in June 2023 (within the historic Hafod-Morfa Copperworks heritage site).

Production

Penderyn's most distinctive technical feature is the Faraday still — a single copper pot still that produces spirit to high strength in a single pass, yielding a lighter, more delicate character than double-distilled Scotch. Production capacity at the Brecon Beacons site is approximately 700,000 litres. Water comes from a spring beneath the Brecon Beacons National Park, one of Wales' most pristine water sources. Maturation uses a variety of cask types: ex-bourbon barrels provide the base, with Madeira wine casks, Oloroso sherry casks, Port pipes, and ex-peated spirit casks used for the range of finishing expressions. In addition to whisky, the distillery produces Brecon Gin, Five Vodka, and Merlyn Cream Liqueur.

Tasting Character

Penderyn is characterised by a lighter, fruit-forward profile relative to most Scotch single malts, a direct result of the Faraday still's efficiency. The Gold range (premium tier): Madeira Finish — dried fruit, warming spice, sweet wine note; Sherrywood — richer and nuttier with Oloroso sherry influence, aged in both bourbon and sherry casks; Portwood — rich dried fruit from Port cask finishing; Peated — light delicate smoke with crisp fruit and vanilla. The Dragon range offers the same finish styles at a lighter, more accessible price point: Legend (Madeira finish), Myth (bourbon finish), Celt (peated). Single cask limited editions and Icons of Wales series add collectability.
