Auchroisk Distillery
Auchroisk Distillery is a Diageo-owned Speyside distillery near Mulben in Banffshire, built in 1972 and producing from 1974. Its founding was driven by the discovery of Dorie's Well, whose water was found to have similar mineral qualities to that used at Glen Spey Distillery for the J&B blended Scotch blend. The name is notoriously difficult for non-Scots to pronounce — approximately "Oth-rusk" — and translates from Scottish Gaelic as "shallow ford across the red stream", referring to the nearby Mulben Burn. The distillery's awkward name led it to be briefly rebranded "The Singleton" from 1986 to 2001; it was later renamed The Singleton of Auchroisk in 2008 before the plain Auchroisk name was reasserted for the Flora & Fauna release. Annual capacity is 3.1 million litres.

History
Justerini & Brooks, the wine and spirits merchant behind J&B Rare blended Scotch, identified Dorie's Well on the Mulben estate as a suitable water source for producing blending malt with qualities similar to Glen Spey. A test batch was distilled at Glen Spey using Dorie's Well water and approved; the company then built a new distillery at the well's location rather than transport the water. Construction began in 1972 and the first spirit flowed in 1974. The first single malt bottling appeared in 1978. In 1986 the distillery's malt was rebranded "The Singleton" to sidestep the pronunciation problem — a name that proved confusing when Diageo later used the same "Singleton" brand for distilleries in Dufftown and Glen Ord. In 1997 Auchroisk became part of Diageo via the Grand Metropolitan–Guinness merger that formed the company. In 2001 the Auchroisk name was restored for the Flora & Fauna series. In 2008 a third identity — The Singleton of Auchroisk — was introduced for certain markets. The distillery remains primarily a blending-malt operation supplying J&B Rare.
Production
Water comes from Dorie's Well — the discovery that prompted the distillery's founding. The distillery runs four wash stills and four spirit stills, giving an annual capacity of 3.1 million litres of pure alcohol. Diageo classify the production style as "nutty-spicy": the production regime involves rapid mashing, quick fermentation, and a vigorous boiling action in the wash stills that carries some grain solids through, creating an almost singed or toasty character in new make. This evolves with maturation into honeyed cereal sweetness with nutty and spicy notes. The bulk of production goes into J&B Rare blended Scotch. Cask diversity on the secondary market is notable: independent bottlers have offered ex-bourbon, PX sherry, Oloroso, port, Sauternes, Moscatel, Pineau des Charentes, and Côte-Rôtie wine cask variations.
Tasting Character
The Diageo house style classification — "nutty-spicy" — captures the essential character well. The spirit has an unusual toasty or singed quality from the production regime, which adds complexity against the baseline of honeyed Speyside cereal. With age this develops into roasted barley, hazelnut, honey, gentle vanilla, and a dry spiced finish. The Flora & Fauna 10 Year Old (43% ABV) at around £60 is the accessible entry point. Independent bottlings have demonstrated that Auchroisk takes well to sherry, port, and exotic wine finishes, producing notably diverse expressions.
