
Caol Ila Distillery
Islay's largest malt distillery, founded in 1846 by Hector Henderson on the north-east coast of the island, spectacularly sited on a clifftop above the Sound of Islay — the Gaelic name Caol Ìle means "Sound of Islay." Owned by Diageo, the distillery describes itself as "the Islay home of Johnnie Walker," reflecting the fact that approximately 95% of Caol Ila's vast production has historically gone into blended Scotch, principally Johnnie Walker Black Label. The modern six-still plant was built in 1972 — replacing the original Victorian distillery entirely — and with an annual capacity of 6.5 million litres makes Caol Ila one of the highest-volume distilleries in Scotland. Since 1999 it has also produced a non-peated variant, adding range to its portfolio.

History
Caol Ila was founded in 1846 by Hector Henderson, who chose the clifftop site on the north-east coast of Islay for its spectacular view across the Sound of Islay towards the Paps of Jura. Henderson sold the distillery in 1854 to Norman Buchanan, who also owned the Isle of Jura Distillery at the time. Buchanan sold in 1863 to Bulloch Lade & Co. of Glasgow, whisky traders who expanded production significantly over the following decades. The distillery closed from 1930 to 1937 during the Depression and again from 1942 to 1945 during the Second World War due to barley restrictions.
In 1920 Bulloch Lade entered voluntary liquidation and Caol Ila Distillery Company Ltd was formed; in 1927 the Distillers Company gained a controlling interest, with Scottish Malt Distillers Ltd achieving full ownership in 1930. The Victorian distillery buildings were demolished in 1972 and a modern, high-capacity plant built in their place — a controversial decision that prioritised efficiency over heritage, though it enabled Caol Ila to become Islay's dominant production site. Diageo assumed control through the 1997 Guinness–Grand Metropolitan merger and has expanded the distillery's role in the Johnnie Walker supply chain.
Since 1999 Caol Ila has periodically produced unpeated "highland spirit" alongside its standard peated runs, offering independent bottlers and Diageo's own portfolio a lighter, non-peated Islay character from the same stills.
Production
Caol Ila draws its distilling water from Loch nam Ban. The distillery operates three wash stills and three spirit stills, making it the largest malt distillery on Islay with an annual production capacity of approximately 6.5 million litres of pure alcohol. This scale is necessary to supply the enormous volumes of Islay malt required for Johnnie Walker Black Label and other Diageo blends. The distillery produces both peated spirit (the standard Caol Ila character, typically at approximately 35 ppm) and, since 1999, unpeated spirit for variant expressions. All cooling is through shell-and-tube condensers rather than traditional worm tubs, reflecting the 1972 rebuild's modernist priorities.
Tasting Character
Caol Ila is notably lighter and more citric than its southern Islay neighbours (Ardbeg, Lagavulin, Laphroaig). The style is clean, fresh, and peated, with notes of pear, grass, juniper, and a distinct seashore character — crab creels, lobster shells, and fresh sea air alongside gentle smoke. It offers a fresh, coastal peatiness rather than the dense, tarry, medicinal smoke of the south-coast distilleries. The Moch expression (meaning "dawn" in Scottish Gaelic) is the lightest, most accessible style; the 12 Year Old is the standard; the 18 Year Old and Distiller's Edition (finished in Moscatel casks) add complexity from extended ageing.
