Wemyss Malts

William Wemyss established Wemyss Malts in 2005, drawing on the family's long connection to Fife and a personal passion for single cask Scotch whisky. The concept of naming bottles by flavour rather than distillery was unusual — even radical — at the time. Where most bottlers prized the cachet of a famous name on the label, Wemyss argued that what mattered was what was inside the bottle, and that giving the whisky an evocative, approachable name was more honest communication for the consumer.

The single cask programme quickly attracted a following among collectors and whisky enthusiasts, who appreciated the access to rare distillery stocks that the Wemyss buying relationships provided. Each single cask release was (and still is) named for the dominant tasting character found in that specific cask — names like "The Butterscotch Sundae," "The Heather Honey Pot," and "The Rich Treacle" communicating in seconds what the whisky delivers.

In 2013 the Wemyss family took over the Kingsbarns distillery project in East Fife — a long-discussed scheme to build a new distillery on the famous Kingsbarns golf coast — and the distillery opened in 2014. This added a production arm: Kingsbarns now produces its own Dream to Dram single malt from Fife barley, complementing the independent bottling operation. Darnley's Gin — named for Lord Darnley, the husband of Mary Queen of Scots, who was born at Wemyss Castle — was also introduced as a premium craft gin under the Wemyss umbrella.

As an independent bottler, Wemyss Malts does not distil its own whisky (with the exception of Kingsbarns Distillery productions). Instead, the business sources individual casks and batches from distilleries across Scotland, selecting on the basis of flavour character. The blended malts — The Hive, Peat Chimney, and Spice King — are assembled from multiple distillery stocks to deliver a consistent, house-style flavour profile year after year. Single cask releases are bottled at natural cask strength, unfiltered, and represent a snapshot of a specific barrel at a specific moment.

The Hive is sweet and honeyed, built around light, grassy Speyside malts and rich vanilla from American oak — an approachable, food-friendly blend ideal for introducing new whisky drinkers to the category.

Peat Chimney blends smoky, coastal malts for a characterful but not extreme peated expression — woodsmoke, brine, and dried fruit in balance.

Spice King emphasises spicy, fruit-forward character: cinnamon, dried orange peel, and warming ginger, built from a selection of spicier malt distilleries.

Single cask releases vary enormously by distillery and vintage, making each a unique and non-repeatable bottling.
